The word fattoush is derived from the word 'fatteh', meaning 'crumbs', referring to the leftover pita bread pieces mixed into the salad. Traditional fattoush salad consists of Romaine lettuce, tomatoes, cucumber, thinly sliced radishes, parsley and crunchy pita chips (sometimes red onion and purple cabbage, too).
